This Red Lentil and Sweet Potato Soup is a super tasty and super easy soup.  If you love ginger you may want to add more.  This is a kid friendly soup too.  I had no trouble getting my two picky eaters to eat this soup.

Ingredients
  • 2 cups red lentils
  • 2 cups onions (chopped)
  • 1 teaspoon olive oil
  • 2 1/2 cups sweet potatoes (peeled and cubed)
  • 2 teaspoons sea salt
  • 8 cups water
  • 1 1/4 teaspoons ginger (fresh grated)

  • 2 cups red lentils
  • 2 cups onions (chopped)
  • 1 teaspoon olive oil
  • 2 1/2 cups sweet potatoes (peeled and cubed)
  • 2 teaspoons sea salt
  • 8 cups water
  • 1 1/4 teaspoons ginger (fresh grated)

Instructions
  1. In a soup pot, sauté onions in the olive oil till transparent.
  2. Add lentils, ginger, sweet potatoes and water.
  3. Cook for approximately 30 minutes or until the lentils and the sweet potatoes are soft.
  4. Move as much of the lentils as possible leaving behind as many sweet potatoes as possible (it's ok to take onions and broth with the lentils) to a blender.
  5. Blend the lentils and return to the pot.  Your soup should have a creamy constancy with chunks of sweet potatoes in it.
  6. Add salt, stir and serve.
