Pumpkin is one of my favorite ingredients to use. I don’t care what time of year it is, I jump at the opportunity to use it! I stumbled upon this recipe when I attempted to make a quick batch of pumpkin bread with some almond meal leftover from making almond milk. What resulted was a great pumpkiny surprise! These squares are like a combination of pumpkin bread and bread pudding. The texture is simply amazing. No need for a glass of almond or coconut milk to wash these down!

Instructions
  1. Preheat oven to 350 degrees.
  2. Combine the flax seed meal with the hot water in a separate bowl.
  3. Let it sit for about 15 minutes.
  4. After 15 minutes, combine all ingredients and blend in a blender.
  5. Lightly grease an 8 x 8 pan.
  6. Pour the batter into the pan and bake in the oven for 30-35 minutes.
  7. Enjoy!

** For more flavor, add chocolate chips or walnuts into the batter before baking! **
