Ingredients
  • 2 guaque chilies (dried, de-seeded and de-veined), can also use Guajillo chiles
  • 2 pasa chilies (also called Pasilla negro chilies) (dried, de-seeded and de-veined), can also use a poblano/mulato chilies
  • 2 roma or plumb tomatoes
  • 2 ounces raw pumpkin seeds
  • 2 ounces sesame seeds
  • 2 black peppercorns
  • 2 cloves
  • 1 sticks cinnamon
  • 8 ounces vegan chocolate
  • 3 plantains
  • olive oil

Instructions
  1. Begin by toasting the chilies, tomatoes, peppercorns, cloves, cinnamon, pumpkin seeds, and sesame seeds. Traditionally this is done on a comal, but it can be done in a pan with no oil.
  2. After the ingredients are roasted break up the chilies and place them and the roasted ingredients in a blender with 3 cups of water. Blend for 5 minutes.
  3. Place the liquid in a sauce pan and add the chocolate and stick of cinnamon. Mix and boil mixture on medium heat for 15 minutes. Stir occasionally.
  4. Slice the plantains and place in a frying pan with olive oil. Fry for 3-4 minutes while flipping sides, until golden brown.
  5. When the plantains are done, place them in the boiling mole sauce.
  6. Boil the plantains in the mole mixture for 10 minutes and serve.
