A great fall vegetable that is coming into season is Butternut Squash! This is an extremely versatile vegetable that I love cooking with. You can make soup, roast it, stuff it, or.. make them into fries! Get ready for the best and healthiest fries you’ve ever had! Not to mention this would go great with the Homemade Ketchup recipe I just posted ?

I’ve been living around the world for several years now. I’ve already experienced the oriental lifestyle of China, vibrant culture of Barcelona, shabby to chic of Paris, Confucian ways of the Korea peninsula (South, not North of course) and now the easy-going vibe of Los Angeles. I’m an advocate of the minimalist lifestyle because I love being able to pack up my things and go in a moment’s notice. I’ve found a great work, life, and spiritual balance that’s ideal for me.
